local ingredients, recipes rooted in Ticinese culinary tradition and preparations
that respect nature and the cycle of ingredients.
The daily menu takes shape from the arrival of fresh products, seasonal proposals
follow the progression of the periods, and the à la carte selection
gathers the dishes that define the character of the table.
Alongside the cuisine of the territory, Cantinin also offers
a selection of fish dishes and a few Iberian-inspired incursions,
integrated with measure into the rhythm of the menu.
Each choice maintains continuity with the territory and with those who
cultivate it, raise it and produce it.
